Bowl #1
1/2 C Coconut Oil (melted)
1/2 C raw honey
2 Large Eggs
1 tsp Almond extract (Vanilla may be used but the Almond is great!)
Bowl #2
3 C blanched almond flour
1 tsp sea salt
1 tsp arrowroot powder (or baking soda)
1C Chocolate morsels (We go with 1/2 C mini morsels, it seems to still satisfy that "chocolate chip" craving but does not over power the cookie)
Combine dry ingredients in one bowl and wet ingredients in another bowl.
Add the mixtures together.
Scoop onto a cookie sheet covered with wax paper
Bake for 9 minutes at 350 degrees. I slide the wax paper onto the counter and let the cookies cool. Otherwise, they can overcook if you leave them on the cookie sheet.
