Zucchini Bread

Zucchini Bread

1 loaf or 12 Muffins.  WE LOVE TO MAKE BITE SIZED MINI-MUFFINS IN A MINI-MUFFIN TIN - it makes about 45.

  • 2 C blanched almond flour
  • 1/2 tsp sea salt
  • 1/2 tsp baking soda
  • 1 Tsp cinnamon
  • 1/4 C Coconut Oil
  • 1/2 C agave nectar
  • 2 Large Eggs
  • 1 C grated zucchini

Preheat oven to 350 degrees.

You can line with parchment or grease and dust the pans with almond flour.

If you’re making a loaf, bake 50-60 minutes. If muffins bake 25 minutes or until a knife comes out clean.
